Add a takeaway hatch
A serving hatch on the street elevation separates takeaway from the in-store queue, which keeps the small seating area from congesting at peak.
Swap the communal table for booths
The communal table zone takes two four-person booths instead, which suits shops where customers stay longer and want more privacy.
Add a small food prep line
Extending the back of house by around 6 m² makes room for a panini press, toaster and prep bench, moving the offer beyond pastries.
